Microbiological evaluation of industrialized and artisanal Minas fresh cheese commercialized in the Federal District, Brazil

The aim of this study was to evaluate the microbiological quality Minas fresh cheese commercialized in Federal District, Brazil. For this, 20 samples industrialized cheeses were collected supermarkets and artisanal public food markets. analyzes performed total count bacteria, determination coliforms, S. aureus identification Salmonella spp. (InvA gene) (SeC gene). results showed that 26 (65%) unfit for consumption according Brazilian legislation. cheeses, 6 (15%) (3 excess thermotolerant coliforms 3 aureus). all (50%) due high counts, including had 1 sample contaminated with Salmonella. Comparing results, better than cheeses. Thus, markets District presence bacterial hazards, there is an evident need good hygiene practices entire production chain ensure consumer safety.
